Cream of Sweet Potato Soup (Dairy Free)

3 Medium sweet Potato cut into small cubes
2 Medium onion chopped coarse
4 cloves garlic chopped coarse
2 stalks celery chopped
4 cups vegetables broth or water
1 inch ginger grated or chopped
1 teaspoon cumin powder
1 pinch celtic & pepper to taste
4 teaspoon coconut oil


1. Place into 4 cups vegetables broth or water, sweet potato, onion, garlic, ginger, celery.

2. Bring to a boil, then reduce heat to a gentle simmer and cook for approximately 20 minutes or until Sweet potato are soft.

3. Blend in batches and add the coconut oil, cumin and salt & pepper.

4. Make sure the blender is not more than half full, and start on low. Adjust seasoning.
