2 cups green leaf lettuce (wild)
2 cups carrots, finely chopped and julienne cut
1 ripe avocado, cut into chunks
2 Tbsp. lime juice
3 Tbsp. flaxseed oil
1 tsp. Dijon mustard
1 tsp. fresh ginger, grated
Celtic sea salt
1 cup sunflower sprouts or any sprouts available


In a large bowl, toss all ingredients except for the sprouts. Arrange salad on plates and gently place sprouts on top.
