No-Bake Gluten-Free Coco Energy Bites

These Energy Bites have been a huge hit with clients. They are the easiest, most delicious, and decadent chocolate balls you’ll ever make. They’re also packed with protein and natural sugar that the body can use, and they are great for stabilizing blood sugar levels.

When I make them, I usually have one with my juice or smoothie. They freeze well, and the recipe makes a huge batch. They are the best, and so convenient!


No-Bake Gluten-Free Coco Energy Bites

1 cup almonds
1½ cups cashews
1/4 cup or less of honey 
2 cups pure cocoa
Pinch of finely ground sea salt
Up to ¼ cup water
1 cup dried and shredded coconut
½ cup cranberries
½ cup cacao nips

In a food processor, grind the nuts into a fine mill. Mix the rest of the ingredients in a mixing bowl with your hands.

With wet hands, roll the mixture into golf-ball-size balls. Keep the fudge balls in the refrigerator in an airtight
