Whole Meal Salad with Lemon Tahini Dressing

Ingredients:
Salad:
4-6 cups lettuce: ( green mix, red lettuce or leaf lettuce)
1 handful of pumpkin seeds
1 small avocado, cubed
1 carrot, chopped
Tomatoes
Cucumber
2 green onions, sliced
Clover, Radish or Alfalfa, Mustard Sprouts
Lemon Tahini Dressing:
¼ cup sesame tahini
¼ cup freshly squeezed lemon juice
2 tablespoon water
2 tablespoon extra virgin olive oil
1 clove garlic, crushed
2 to 3 teaspoon lemon zest
¼ teaspoon sea salt, or to taste

Cucumber

Clover, Radish or Alfalfa, Mustard Sprouts
Lemon Tahini Dressing:
¼ cup sesame tahini
¼ cup freshly squeezed lemon juice
2 tablespoon water
2 tablespoon extra virgin olive oil
1 clove garlic, crushed
2 to 3 teaspoon lemon zest
¼ teaspoon sea salt, or to taste
Method:
Top the salad with pumpkin seeds, cube avocado, chopped carrot, tomatoes, cucumber, green onions.
Place all of the ingredients for the dressing into a small bowl and whisk together. Taste and add more sea salt or garlic if desired.
Pour desired amount of dressing over each salad. Store extra dressing in a glass jar in the refrigerator.
Dressing will keep for up to 10 days.
This delightful, nutrient-dense salad makes a great energizing lunch, which is I often eat it. I often like to add some steamed cubed beets which add even another dimension of color and flavor. Any Dressing will work here!
