Quinoa Beet Salad

3/4 cup quinoa, cooked or sprouted
3 beet roots, peeled and shredded
2 Tbsp. extra-virgin olive oil
Freshly squeezed juice of one lemon
3 green onions, chopped
1/4 cup fresh dill or cilantro, finely chopped
Celtic sea salt and freshly ground pepper to taste
Sprouts to garnish


Toss all ingredients together and chill for at least an hour. Adjust seasonings, if required.
This refreshing salad is bursting with color and flavor.
