Ingredients:
3/4 cup quinoa, cooked or sprouted
3 beet roots, peeled and shredded
2 Tbsp. extra-virgin olive oil
Freshly squeezed juice of one lemon
3 green onions, chopped
1/4 cup fresh dill or cilantro, finely chopped
Celtic sea salt and freshly ground pepper to taste
Sprouts to garnish

Method:
