Hot Quinoa Breakfast Cereal

1 1/2 cups water
1 tsp. cinnamon, plus more for sprinkling
1/2 cup unsweetened applesauce
1/4 cup raisins
1/2 cup coconut milk for drizzling (organic coconut milk from Earth’s Choice)
1 apple, peeled and diced
1 tsp. chia seeds or ground flax seeds
1. Rinse and drain quinoa.
2. Add quinoa and water to a medium saucepan and stir. Bring to boiling. Cover and reduce heat to a simmer.
3. Cook about 12 minutes or until the water is absorbed and the quinoa is tender.Put cooked quinoa in a bowl, and stir in the remaining ingredients.
