Berry Chia Seed Breakfast Pudding

This pudding is a fantastic treat that you can have as a dessert or for breakfast. It’s something I keep quite often in the fridge.

I’ve tweaked the recipe a bit, but the original version came from Dr. Mark Hyman’s book 10-Day Detox Diet.

Berry Chia Seed Breakfast Pudding

2 cups raspberries or blueberries, divided (I much prefer raspberries!)
3/4 cup coconut milk (full fat)
1/4 tsp. sea salt
1/2 tsp. real vanilla extract
1/2 tsp. cinnamon
1/2 cup chia seeds
1/2 cup shredded, unsweetened coconut
2 Tbsp. hemp seeds
1/4 cup walnuts, crushed

Blend 1 cup raspberries or blueberries with coconut milk in a blender.

Add salt, vanilla, cinnamon, and chia seeds to a bowl. Pour in raspberry or blueberry mixture and stir to combine. Seal in an airtight container in the fridge for 12 hours or overnight.

When ready, give pudding a stir. Divide into 4 small bowls and top with coconut, hemp seeds, walnuts, and remaining berries.

Makes 4 servings
