Saturday night we had company. I made dairy-free flavored whipped cream. It’s a perfect accompaniment with strawberries or other berries. It’s so good!

I can’t take full credit for this recipe. Jennifer Cornbleet, who wrote the amazing Raw Food Made Easy Recipes for 1 or 2 people and I’ve used her recipes often.
1 cup soaked raw cashews
1/4 cup plus 2 tablespoon water
2 tablespoons pure maple syrup
1 teaspoon vanilla extract, or seeds of 1 vanilla
Place all the ingredients in a blender and process on hight speed until smooth. Chill for at least 2 hours before serving. Stored in a sealed container in the refrigerator. Will keep for 5 days. Serve the sauce with fresh berries.

A cup of warm water with lemon followed by a cup of nettle tea first thing in the morning will get you going in the bowel department.
Nettle is detoxifying and improves the ability of the liver and kidneys to cleanse the blood. It also curbs the appetite and cleanses toxins from the body.
The Nettle plant is used to treat gout and arthritis and has antihistamines and asthma-relieving properties. It is also used as an analgesic, anti-inflammatory,antiseptic, blood cleaner, diuretic and digestive stimulant.Nettle infusion is a safe, gentle diuretic which is considered restorative for the kidneys and bladder. It’s also recommended for weight loss, but you may shed more pounds of water than fat.
Here’s a great alternative to the traditional hot or Ice Tea without the caffeine! It’s a super pick me-up in the middle of the day.
Hot or Ice Nettle Tea. Bring a quart of water to a boil. Put 2 tablespoons of dry nettle leaves into a teapot and cover with the boiling water. Let the tea brew for 3-5 minutes. Strain before cooling. Add more water, lemon, and your stevia.
Wow! 3 months has passed already, and as much as I loved our visit here in New Mexico, I’m so looking forward to
going back home to my native Canada.
By Sunday, we should be back home. I’m looking forward to organizing and setting up the greenhouse so I can start full production of sprouts and other greens.
En route to Albuquerque, New Mexico with my husband!
We spent the last 3 days in Georgetown, Ontario with friends! We left early Today and will stop in Cincinnati overnight to visit our friends Linda and John until January 1st.
Will continuing with our journey. We have another 3 day’s drive to Albuquerque, and then I’ll take a few days to settle down. Then, it will be back on the swing with new projects for the New Year!
We’ll be stationed in that area of New Mexico for 3 months. I’ll continue with business as usual and take this opportunity to learn more about the new area I’ll be living in and work at the same time.
As an added bonus, I did spot a whole food market and many yoga studios and lots of steaming, mineral hot springs in the area! I’ll keep in touch and send you announcements regarding our new schedule for teleclasses soon.
