My favorite herbs are the weediest weeds. I absolutely love them. If the government came in and said, “Christine, you are allowed one herb. Pick it,” I would have to say it would be nettle. It’s such a dear ally. It’s an incredibly nutritious herb. Energetically, because of the nutrient quality, there is a neutral quality to it, so you can get a lot of mileage out of it that way.

You can add a couple of spicy herbs to warm it up or some cooling herbs to cool it down. When nettle is fresh, it’s very hot. A fresh tincture or fresh plant is energetically very hot. You certainly get that feeling when you get stung by it. Nettle, I would have to say, would be my first one. My second favorite is plantain. I could not do without plantain. It’s a brilliant weed that people walk all over.

It’s interesting because you can’t grow plantain in a pot. It’s one of those things that needs to grow in soil that is tread upon. It needs to grow in compact soil. It can’t grow in loose soil. I think that says a lot about it, too. It’s an incredible plant. It’s a cooling plant, so it helps to cool allergies, beestings, or an inflamed gastrointestinal system. It cools the hot. Another one is burdock.

It’s just a phenomenal plant. I’ve seen it do absolute magic with kidneys. People have had kidneys that are toxic and struggling and they drank cups of burdock root tea. It’s cooling, but there’s a moisture to it so it doesn’t over-dry the body. It’s slightly bitter. There’s a sweetness and a nutrition to it, too. The root is just incredible. Of course there’s the childhood memory of all the burrs in your hair.

Who doesn’t love that? Dandelion. Right now I have what I call my child slave labor. I have three kids, and we were all out on Monday picking dandelions because it’s the perfect time of year to make dandelion wine, which is a nice bitter-tasting wine. When you drink a bitter glass of wine with your meal, you’re actually stimulating your digestion. It’s not all about the alcohol.

My fifth one? I love wild lettuce, lactuca. That would be right up there in my top five. Again, it’s another cooling, nervine herb. It’s a bitter, so it helps to stimulate a good digestive system. It is cooling on the liver. The liver is kind of like the Goldilocks in the body. It doesn’t like to be too hot or too cold. It likes to be cool. A lot of people are walking around with inflamed, hot livers. Lactuca just calms the nervous system and calms and cools the liver. It’s a great remedy. I really like it.

I’m a little behind with the garden and greenhouse this year. Here’s how it’s looking! We are in the completion stage of many outdoor projects…

In few weeks I should be able to start planting in the garden–everything from seeds.

There will be green lettuce, Swiss and rainbow chard, four different types of kale, French sorrel, arugula, red mustard, cabbage, radicchio, wasabi green, spice salad, spinach, lots of cucumbers and tomatoes, root vegetables like carrots, beets and some radish, as well as all of my culinary herbs. This is so exiting!

My husband, Yvan, and I are living off the grid, relying on the sun and the wind to provide all our power. We have a wood stove to keep us warm during those cold Canadian winter months.

My new year-round home is also a place where I can grow my own organic food, which you’ve seen pictures of this past summer. I’ve added additional pictures.

Now we’re adding another project that we’ve started and hope to have finished before winter sets in. My husband is in the process of building a Root Cellar.

The root cellar is outside and deep enough to keep vegetables all winter without them freezing.Because we’re off the grid, adding another refrigerator is not ideal. So we’ll let you know once it’s finished and how it goes, but here are some pictures of where we’re at now.

We’ve had such amazing weather! Just enough rain and plenty of sunshine. I’ve been juicing and eating fresh herbs and greens from the garden!

I am so grateful for this opportunity. I know some of you might be thinking~ this would be way too much work. See, I’m no different than anybody else out there. My life gets crazy and out of balance sometimes!

The difference now is that I’ve stop being a People Pleaser and eliminate energy drains in my life. Certain things in our life just cause us to be more exhausted than others, with less value.

Identify them, and cut them out. You’ll have much more energy and less stress. Just doing this gives me the extra time to contribute to a better planet, helping people and spending more time with the ones I love the most and taking care of my body.

If I don’t ~ who will??
